An autumn dinner party delight:

I absolutely love having dinner parties. Autumn is my favorite time of year for dinner parties. The ambiance of lit candles and cool weather, feels like home. My mother is hostess extraordinar, so it’s in my blood.

A super easy and pleasing fall meal to make your quests: Red Quinoa with rosemary sweet potatos and Simple Kale Salad.

1 cup red quinoa (for 2 people) Multiply recipe as needed.

1 sweet potato

fresh rosemary sprig

1 tomato

1 green onion

pinch sea salt

Boil 2 1/2 cups water. Add 1 cup red quinoa and diced sweet potatoes. Boil for 5 minutes. Cover and turn down to simmer for 15 min. Dice tomato and add to simmer for 5 more minutes. Add chopped green onion and fresh rosemary to quinoa when it’s almost finished, so you may enjoy the raw oils in the herbs. Add pinch of sea salt. Stir and enjoy. The green onion will remain bright green, adding that splash of green color to the reds and oranges. This meal in high in lysine, vitamins B and K, and numerous other nutrients.

Simple Kale Salad

1 bundle kale

½ cup olive oil

1 tbsp tamari or nama shoyu

1 tbsp yellow mustard

Wash and tear up kale leaves, leaving stems out. Put stems in your compost pot or juice them with apple, ginger and lemon. Mix together dressing ingredients. Pour on kale and massage into kale for 2 min. This breaks down the kale, making it delightful to eat. Massaging kale is like kneading bread almost. Just grab it with your hangs and squeeze. Send it your love and gratitude while you do this. Sprinkle salad with sunflower, hemp or flax seeds for extra protein.

*Kale is 45-65% protein by volume, and its high in calcium, magnesium, and phosphorous, as well as phytonutrients, and fiber. Eat kale friends!
