Raw Coconut Pudding 2

Raw Coconut Pudding!
My “raw foodie” friends will know this great staple. This is great for kids! They love to help you make it too. We have coconuts available year round in California, hope you have them available by you. This takes a fraction of the time it takes to make traditional pudding and it’s a health and beauty treatment!

Core out 3 or 4 young coconuts (the white ones). If you don’t know how to open a coconut you can refer to a demo video. http://thesolutionsdoc.com/film.shtml

Brief explanation, chop four solid chops to the top of the coconut in a square shape, that should open it. Then peel back top section.

Pour the beautiful enzyme rich water into a pitcher and set aside. With a large spoon, scrap out the coconut meet into the blender. This is the part the kids can help with. Add a teaspoon of vanilla and just enough coconut water to make it blend nicely into a pudding.

That’s it. Super easy, and super great for you! See health details below. This is a great baby food too, I’d omit the vanilla for the babies.

I’ve made variations to this; for chocolate, add about 1.5 tablespoons of raw cacao powder. For a fruity touch, add berries, or a banana. If you make a big batch, make it without the fruit, it will last three days.

Find young coconuts at Whole Foods, or a thai market in your area, or you can order a box online. I’m all for eating local, but when it’s comes to coconuts, they are so good for you, celebrate the distribution systems we have and bring them in.

Coconut is highly nutritious and rich in fiber, vitamins, and minerals, and provides benefits beyond nutritional content. Coconut oil possesses healing properties far beyond that of any other dietary oil and is extensively used in traditional medicine among Asian and Pacific populations. For the indigenous people of the tropics, coconut water was prescribed as a medicine for those suffering from headaches, fevers, diarrhea, and other ailments.

Pacific Islanders consider coconut oil to be the cure for all illness. The coconut palm is so highly valued by them as both a source of food and medicine that it is called "The Tree of Life." Only recently has modern medicine studied and validated coconut's amazing healing powers. ?

Interesting fact, During World War II and the Vietnam War, the large number of injured soldiers meant there was often a shortage of IV solution. Medical professionals injected coconut water into the blood stream to help prevent dehydration. This could be done safely because the water is quite similar in composition to human plasma.
